ClĂ©ment LavallĂ©eâs Les Copains dâAbord Saint-Bris is a low-intervention wine from carefully tended vineyards. Hand-harvested and gently pressed, it undergoes indigenous yeast fermentation, natural malolactic in barrel, and ageing in both oak and stainless steel. Unfined, unfiltered, and handled with gravity rather than pumping, it reflects a delicate, pure expression of Saint-Bris.
Taste
Pale straw in the glass, with aromas of citrus blossom, green apple, and subtle mineral notes. The palate is fresh and precise, with fine texture, vibrant acidity, and a clean, lingering finish that balances purity with character.
About the Producer
ClĂ©ment LavallĂ©e is one of the rising stars of the new generation in Chablis. He began in 2019 with just 1.6 hectares of Chablis and subsequently added 5 hectares in Saint-Bris and Bourgogne CĂŽtes dâAuxerre. In 2021, following his fatherâs retirement, he inherited further holdings, bringing the domaine to 14 hectares. Today, ClĂ©ment is joined by his sister Caroline, and together they focus on producing vibrant, precise wines that express the unique character of Burgundyâs northern vineyards
